Blackberry Brownies



Tools + Supplies

  • 9x13 pan

  • sauce pan

  • stand mixer with paddle attachment and metal bowl

  • rubber spatula

  • parchment paper or cooking spray


Ingredients

  • 6oz blackberries

  • 3/4 cup unsalted butter

  • 1 cup dark chocolate chips

  • 1 1/2 cups granulated sugar

  • 2 tsp vanilla extract

  • 3 eggs, room temperature

  • 1 1/2 cups flour

  • 3/4 cup chocolate chips (optional)


Instructions

  • Preheat oven to 350.

  • Muddle blackberries. I used a mortar and pestle, but you could use a fork or spoon and a bowl.

  • Using sauce pan and metal bowl from stand mixer, create a double boiler on the stove top. Melt the butter and chocolate chips together. Once you have an even consistency, incorporate the muddled blackberries.

  • Attach metal bowl to stand mixer. Using the paddle attachment, mix sugar and vanilla extract into chocolate mixture on low speed.

  • Alternate adding flour and eggs, one at a time, fully incorporating on each step.

  • Fold chocolate chips into batter (optional).

  • Pour batter into 9x13 pan (greased or lined with -parchment paper) and bake for 25-30 minutes.
