Simple Box Mix Brownie Pops

Tools + Supplies
stand mixer with whisk attachments
8x8 pan
double boiler or chocolate melter
cake pop sticks
cake pop stand
silicone donut mold
rubber spatula
wax paper
Ingredients
Box Brownie Mix (I used Miss Jones organic brownie mix, but I replaced vegetable oil for coconut oil)
Cooking Spray
Coconut oil
Dark melting chocolate- about 15oz (Ghiradelli Melting Wafers)
White melting chocolate- about 5 oz (Ghiradelli Melting Wafers)
Sprinkles
Instructions
Spray 8x8 pan with cooking spray and bake brownies according to instructions on box.
When brownies have cooled, but are still gooey, mash them up with a fork. Then shove the brownie goo in the donut-molds. Freeze for 30 minutes.
When brownie goo is frozen, pop the donuts out of the molds and poke a cake pop stick through them. Put back in freezer.
Melt dark chocolate in melter, using a small amount of coconut oil to thin it out.
Once chocolate is melted, dip frozen brownie in chocolate. Take your time. Once you are sure they can stand upright without dripping, place them on the cake pop stand to dry completely. Don't let them touch while drying.
Stick cake pops in the freezer and melt white chocolate, using coconut oil to thin it out. Stir white chocolate with rubber spatula. To ice a ring around the top of the donut cake pop, I gently placed the cake pop against the chocolate on the rubber spatula, rotating slightly.
While the white chocolate is still wet, add sprinkles. Then set on wax paper to dry.
