Chocolate Chess Pie with an Oatmeal Cookie Crust

Tools + Supplies
stand mixer with whisk attachment
small sauce pan
pie dish
Ingredients
1 cup quick cook oats
1/3 cup flour
1/3 cup light brown sugar
.5 tsp salt
6 tbsp cold butter, cut into small cubes
1 stick of butter
4 oz semi sweet chocolate chips
.75 cup granulated sugar
2 eggs
Instructions
preheat oven to 375
mix flour, oats, sugar and salt in stand mixer on low speed. Slowly add cubed butter, and mix until crumbly.
press mixture firmly into pie dish, and bake for 10 minutes.
in sauce pan, melt stick of butter over low heat. Add chocolate chips, and stir continuously until mister is smooth. Turn off heat and immediately stir in sugar. Let cool for about 5 minutes.
in stand mixer, whisk 2 eggs. Slowly add chocolate mixture and whisk until smooth.
lower oven temp to 350.
add pie filling to crust. Bake on bottom rack for 30 minutes, then top rack for 10 minutes.
