Mini Steak Skewers + Chimichurri
Tools + Supplies
Cast Iron Skillet
Wooden skewers, cut in half
Oregano (I used dried)
Red Pepper Flakes
Red Wine Vinegar
Salt + Pepper
Start by cutting your steak into cubes and marinating for at least 4 hours.
Marinade: 2 crushed garlic cloves, 1/3-1/2 cup red wine vinegar, 1-2 tsp olive oil, salt and pepper to taste, parsley, cilantro, oregano, red pepper flakes
When you're ready to cook, preheat oven to 400.
Assemble skewers: steak, bell pepper slices, red onion slices, and cherry tomatoes
Sear skewers in cast iron pan, then stick pan in oven for 10-12 minutes, or until cooked as desired.
Chimichurri: cilantro, parsley, oregano, jalapeno, garlic, olive oil, red wine vinegar, and salt in food processor.
Drizzle some of the chimichurri over skewers, and save some for dipping.
Serve skewers on their own as an appetizer. Or enjoy as a meal, served over farro.
