Mini Steak Skewers + Chimichurri

Tools + Supplies

  • Cast Iron Skillet

  • Food Processor

  • Wooden skewers, cut in half


  • Steak

  • Garlic

  • Parsley

  • Cilantro

  • Oregano (I used dried)

  • Red Pepper Flakes

  • Red Wine Vinegar

  • Olive Oil

  • Jalapeno

  • Salt + Pepper

  • Bell Pepper

  • Red Onion

  • Grape Tomatoes


  • Start by cutting your steak into cubes and marinating for at least 4 hours.

  • Marinade: 2 crushed garlic cloves, 1/3-1/2 cup red wine vinegar, 1-2 tsp olive oil, salt and pepper to taste, parsley, cilantro, oregano, red pepper flakes

  • When you're ready to cook, preheat oven to 400.

  • Assemble skewers: steak, bell pepper slices, red onion slices, and cherry tomatoes

  • Sear skewers in cast iron pan, then stick pan in oven for 10-12 minutes, or until cooked as desired.

  • Chimichurri: cilantro, parsley, oregano, jalapeno, garlic, olive oil, red wine vinegar, and salt in food processor.

  • Drizzle some of the chimichurri over skewers, and save some for dipping.

  • Serve skewers on their own as an appetizer. Or enjoy as a meal, served over farro.
