Oatmeal Dark Chocolate Chip Cookies

stand mixer with whisk or paddle attachment
tablespoon or cookie dough scoop
1 cup butter, softened
1.5 cups brown sugar, packed
1 tsp vanilla
1 tbsp maple syrup
1 tsp cinnamon
2 cups quick-cook oats
1.5 cups all-purpose flour
1 tsp baking soda
.25 tsp salt
1 cup dark chocolate chips
Preheat oven to 350.
In mixing bowl, combine butter and brown sugar. Once blended, stir in vanilla, egg, maple syrup, and cinnamon. Mix until light and fluffy.
Stir in oats, flour, baking soda and salt. Once combined, add chocolate chips. Be careful not to over mix.
Drop small scoops on cookie sheet lined with parchment paper, about 2 inches apart.
Bake 10-12 minutes, until golden brown. Cool on wire rack.
