Pantry-Friendly Hobnob Cookies







Tools + Supplies

  • stand mixer with paddle attachment

  • sauce pan

  • cookie sheet

  • wax or parchment paper

  • rolling pin

  • a round cookie cutter or drinking glass

  • cooling rack

Ingredients

  • 1 cup-all purpose flour

  • 1 cup quick-cooking oats

  • 1 cup light brown sugar

  • 2 sticks salted butter

  • 1 tbsp water

  • 1 tbsp maple syrup

  • .5 tsp baking soda

  • dark chocolate chips or melting wafers

Instructions

  • preheat oven to 325

  • mix flour, oats, and brown sugar together in bowl of stand mixer

  • melt butter in sauce pan, then mix in water, syrup, and baking soda

  • combine butter mixture and oat mixture in stand mixer

  • roll mixture between two pieces of parchment or wax paper until about .25 inches thin, then punch circles out with cookie cutter or drinking glass. re-roll scraps 2-3 more times.

  • bake until golden brown about 10-12 minutes.

  • let cookies cool on cooling rack, at least 15-20 minutes.

  • while cookies are cooling, melt chocolate in sauce pan, double boiler, or chocolate melter. dip cookies in melted chocolate, and let chocolate dry for at least 20-30 minutes.
